Lap Your Lips Around Jeff Davis Pie

Sassy Southern, Classy Cajun, by Sylvia Dickey Smith As many of you know, my husband and I recently pulled up Texas stakes and moved lock, stock and barrel to Hot Springs, AR. New state–but still southern, and some of the friendliest folks I’ve ever met. However, moving requires a lot of time and energy. We are still unpacking, sorting and throwing away.

In the meantime, someone the other day on Facebook as me what Jeff Davis Pie was. So, I thought I’d take a few minutes for share the recipe from my Sassy Southern Classy Cajun recipe book. A true southern recipe that is delicious and easy to make.
1/2 cup butter
2 cups sugar
1 Tablespoon flour
1/4 teaspoon salt
1 teaspoon vanilla
4 eggs
1 cup milk
1 unbaked pie shell (chilled)

Cream together butter and sugar until light and fluffy then
add flour, salt, vanilla, and beat well. Add eggs one at a time beating
well after each addition. Slowly stir in milk.

Pour into well chilled shell. Bake at 450ÅãF for 10 minutes.
Reduce heat to 350ÅãF and continue baking for 30 minutes or until firm.
